After you land in Paris, consider taking a trip to Champagne country over to Hautvillers. This beautiful village, nestled on a hillside, will take you back to a quieter time in life. You'll encounter some cobblestone streets, delightful restaurants, as well as breathtaking vistas of the acres and acres of vineyards, many of which become part of prestigious winemakers.
This beautiful black and white image is a picture of one of Hautivier's many hillside vineyards.
Here you can also visit the grave of Dom Perignon. He was was a Benedictine monk at the local abbey, Abbaye Saint-Pierre d’Hautvillers. He had a key influence on the art of making Champagne, especially in conquering the dilemma in the fermentation process which would cause bottles to explode. When When Pérignon died in 1715, as a sign of honor and respect, he was buried in a section of the abbey cemetery traditionally reserved only for abbots.
